Ginger is a common spice used in Indian cooking. Ginger has anti-inflammatory, anti-microbial properties. It is rich in minerals like magnesium, potassium  copper. Ginger root is used in Ayurveda medicine to relieve common cold and cough. Ginger Thogayal is served as a side dish to Rice. It can also be served as a side dish to Idli and Dosa. Ingredients:
Oil
2 tsp
Red Chilly
3
Urad Dal
2 tsp
Tamarind
1/2 tsp
Asafoetida powder | Hing
pinch
Shredded Coconut 
2 tbsp
Salt
As needed
Jaggery
1/2 tsp
Ginger chopped
1/2 Cup

Instructions:
  • Wash and cut ginger into small pieces.  Heat 1 tsp of oil and fry ginger till raw smell goes off.  Remove from stove. Heat remaining 1 tsp Oil in the same pan. Add red chillies, tamarind and urad dal. Fry till urad dal turns golden colour. Add asafoetida powder.

  •  Switch of the stove and add salt, jaggery and shredded coconut. Allow it to cool. Grind it to coarse paste by adding very little water.

Tips:
Adjust chillies to your taste.
Adding coconut is optional.
