Peanut Sundal
Sundal is a South Indian snacks prepared with black chana or brown chana or green gram or chana dal or peanut as main ingredient.This protein rich snacks is prepared on festivals like Navarathri , Ganesh Chaturthi. My mom prepares Sundal as a evening snacks. Verkadalai Sundal


Ingredients:
Peanuts | Verkadalai 
1 cup 
Onions chopped (Optional) 
1/2 cup
Oil
2 tbsp
Mustard
1/4 tsp
Chana dal
1 tsp
Urad dal
1 tsp
Ginger finely chopped
1 tsp
Green Chilly slit open
2
Curry leaves
4
Shredded coconut
2 tbsp
Salt
Coriander Leaves
For Garnishing

Instructions:
  • Soak peanuts for 2.5 hours . Remove the outer layer ( This is optional).

  •  Pressure cook soaked peanuts for 4-5 whistles till it turns soft.

  •  Heat oil in a pan and add mustard, red chilly and curry leaves.When mustard splutter, add channa dal,urad dal and ginger. Fry till chana dal turns golden colour.  Add curry leaves and green chillies.

  •  Add chopped onions and fry it till onions turn translucent. Add cooked peanuts and salt. Fry for a min. Switch off the stove. Add shredded coconut and coriander leaves.

Tips:
Avoid onions when cooking for Festivals.
Adjust chillies to your taste.
