Tomato Chutney | No Grind Chutney
Tomato are rich in vitamins. It reduces the risk of lung and stomach cancer, prevents DNA damage, reduces the risk of heart disease, protects against blood clots and controls blood pressure. Always buy fresh, firm, bright red colour tomatoes. Avoid tomatoes with wrinkled surface and discolored spots.  This recipe is quite easy and can be served as a side dish to Idly and Dosa. It can be prepared within 15 mins. Yields:                         2 Servings

Ingredients:

Oil2 tsp
Mustard1/4 tsp
Cumin seeds1/2 tsp
Urad Dal1 tsp
Curry leaves4
Green Chillies2
Onions Chopped1/2 Cup
Tomatoes Chopped 2 Cups
Salt
Turmeric Powder1/4 tsp
Chilli Powder1 tsp
Coriander Powder1/2 tsp
Coriander LeavesFor Garnishing




Instructions:
  • Heat oil in the pan and add mustard. When mustard splutters, add cumin seeds and urad dal. When urad dal turns golden colour, add curry leaves, green chillies and chopped onions. Fry till onions turn translucent.

  • Now add chopped tomato, Salt, Turmeric Powder, Chilli Powder and Coriander Powder.Add 1/2 Cup of water. Fry it in the medium flame for 5 to 7 mins.

  • If the tomatoes are not mashed properly, use a potato masher to bind tomatoes with other items. Garnish with coriander leaves.

Tips:
Adjust chilli powder to your taste.
Chilli powder can be replaced with green chillies.
Using potato masher is optional. 
Select ripe red tomatoes for best results.
