Mint Rice
Mint is a popular herb in Indian cuisine. It is known as pudina in Tamil. Mint leaves have a aromatic sweet flavour. Mint Leaves helps to eliminate toxins from the body, blood cleanser, acts as coolant to skin irritation and combat bad breath. Always choose fresh green mint leaves. Mint Rice is a easy, quick and healthy South Indian Lunch box recipe. Yields :                         3 Servings
Mint Rice


Ingredients:
Table 1: To Grind
Chopped mint leaves 
( tightly packed) 
1/2 Cup
Green chillies
2
Ginger chopped
2 tsp

Table 2: 
Oil                  
1 tsp   
Mustard              
1/4 tsp
Urad Dal
1 tsp
Channa Dal
1 tsp
Onions or shallots chopped 
1/2 Cup
Cooked Rice
1.5 Cups


Instructions:
  • Grind green chillies, mint leaves and ginger by adding little water into a smooth paste in a blender.

  • Heat Oil in a pan. Add mustard, urad dal and channa dal. Fry till channa dal turns golden colour. Add onions and fry till turn translucent.

  • Add grind-ed mixture and allow it to cook for 5 mins in medium flame till raw smell goes off. Switch of the stove and add rice and salt.Mix well

Tips:
  • Adjust chillies to your taste.
  • Add roasted peanuts or roasted cashews to add more flavour.

  3. I have to agree 100% on the fragrances of mint. One of my fav herbs and I practically add into most of my dishes. Its a great recipe - rice and mint are so good together.
