Vegetable Kurma


Vegetable Kurma
                                                                                                                            I always love this vegetable Kurma. The best thing about this vegetable curry is we can add any combination of recommended vegetables.  My  mom prepares this Indian vegetable Kurma in two ways. I have explained below, one of the methods of preparing Healthy Spicy Indian Vegetable Kurma.

Ready in :                   35 mins
Yields :                         4 Servings

Ingredients:
Table 1: To Roast and Grind
Oil
1 tbsp
Ginger chopped
1.5 tbsp
Garlic cloves
4
Cumin seeds
1 tsp
Fennel seeds
1 tsp
Green Chillies
2
Pottukadalai
2 tbsp
Cloves
2
Cardamom
small
Salt

Cardamom
1
Shredded coconut                 
3 tbsp

Table 2:
Oil                                          
2 tbsp
Mustard seeds
1/4 tsp
Onion(Finely chopped)
1/2 Cup
Veggies of your choice
1.5 Cup
Coriander leaves chopped  
2 stalks






Instructions:
  • Wash and chop the vegetables. Pressure cook for 2-3 whistles.

  • Heat Oil in the pan and add cumin seeds and Fennel seeds.


  •  When they splutter,add ginger, garlic., green chillies, cloves, cinnamon and cardamom. Fry till raw smell goes off. 


  • Switch of the stove and add coconut.  

  • Allow the mixture to cool down. Grind the mixture by adding enough water and pottukadalai .     


  • Take oil from table 2 and heat it in a pan. Add mustard seeds.When they splutter add finely chopped onion and fry till onions turn translucent.

  •  Once the onion turn translucent, add vegetables and fry for 2 mins. 





  • Add grind-ed  mixture and add 1.5 cups of water. Allow the gravy to boil.Simmer it for 5 mins. When the gravy turns thicken , add salt. Garnish with coriander leaves. Enjoy it with chappathi.

Tips:

  • Recommended vegetables are Carrots, beans, Turnip, Cauliflower and Grean Peas.
  • Variation can be done by frying the green chillies along with onion, instead of grinding.
